Edamame de la Jefa

Edamame de la Jefa (translated to The Boss's Edamame) is my version of mouth-watering, garlicky, stir-fry edamame inspired by my boss when I worked for Rite Aid Pharmacy.
It's pretty quick to make and only requires a few ingredients. You can customize this recipe to your liking very easily as well! I'll be honest: I can finish a bag of edamame by myself and I usually do. It is just so, so, good. Edamame is traditionally boiled or steamed and served with salt or soy sauce. This version goes above and beyond. Try it and enjoy!
Edamame de la Jefa
Total time: 25-30 min. Difficulty: Easy
Ingredients
1 bag of frozen edamame (12-16 oz.)
1 Tbsp olive oil
1 Tbsp minced garlic
2 Tbsp butter
Soy sauce
Garlic powder
Crushed red pepper
Salt
*optional: Everything Bagel seasoning
Directions
Steam the edamame. This can be done in the microwave if you have a steamable bag which may save some time. Don't heat it up in the microwave too long, as the edamames will steam in your pan during the stir-fry. Otherwise, cut the bag of edamame open, dump the lovely, frozen green pods in a medium pan on medium-low heat, and cover for about 10 -15 minutes. Check on your edamames to see if the ice has melted. Uncover and let the water evaporate. The pods don't have to be fully open quite yet.
Flavor the edamame. Create a hole in the middle of your pan by using a large wooden spoon to push the edamames to the sides. Add olive oil, garlic, and butter in the middle, turn up the heat to medium, and let it sizzle for a minute. Give that trio a loving stir, then mix it all together so your edamame is glazed with garlicky oil. Introduce a splash of soy sauce to the pan, a small shake of garlic powder, and a sprinkle of crushed red pepper and salt. If you have *Everything Bagel seasoning, skip the salt as it usually has salt in the bottle already. You'll add this after the edamame are done. When the pods begin to open, you're finished cooking!
Enjoy your edamame!
Sprinkle some Everything Bagel seasoning or sesame seeds, or have it just as is. If you've never had edamame, please don't eat the pods! My coworker did that. You'll want to just enjoy the yummy goodness on the outside, eat the soybeans on the inside, and discard the pods! Sort of like eating sunflower seeds. But I prefer these for sure!



I always set up two bowls: one bowl for the stir-fry pods and one empty bowl for the pods after I've eaten the soybeans inside. The garlicky, buttery goodness collects at the bottom of the bowl making the last of the edamame arguably the tastiest! Edamame has a good amount of protein, fiber, and folate so you don't have to feel too guilty about having it :-)
